Decisive for the intriguing properties
of aqueous solutions is the intricate balance between solvent-solvent,
solvent-solute and solute-solute interactions which can be
phrased by the catchwords hydrophilic and hydrophobic hydration.
These phenomena originate in the ability of water molecules
to form strong inter-molecular hydrogen bonds which gives
rise to co-operative relaxation processes and is able to
trigger structure formation and self-association of solute
molecules to supra-molecular aggregates.
The aim of this lecture is to show what information on the
hydration and association of solute molecules can be obtained
from precise quantitative dielectric relaxation experiments.
After a brief introduction into the dielectric relaxation of
pure water, examples for hydrophilic and hydrophobic hydration
as well as for solute association driven by Coulomb forces
and hydrophobic interactions will be discussed. Aqueous electrolytes
as well as micelles and micro-emulsions will be considered.
It will be shown that the quantitative information obtained
for these systems with dielectric spectroscopy not only can
be linked to knowledge acquired with other techniques but also
provides novel insight which is not accessible otherwise.
